This service knife is produced under the supervision of the French Food Culture Center, a respected organization dedicated to promoting French food and culture in Japan. By repeatedly forging steel of two different hardness levels, an elegant ripple pattern emerges, and the high uniformity of the VG10 core steel ultimately delivers maximum sharpness. Its handle shape is designed to accommodate the unique grip and handling techniques of French food service professionals. The hygienic, all-stainless steel handle features a textured "tornado pattern" to prevent slipping, even with wet or greasy hands.

TOJIRO has been actively engaged in initiatives under the slogan “Worldwide exchange and inheritance of food and cooking culture.” As part of these activities, they have sponsored the “Contest of Restaurant Service – Maitre de Service Cup” and are also a corporate supporting member of the “Association des Maîtres de Service.” Through these engagements, they recognized the absence of knives specifically designed for service professionals worldwide and observed the challenges these individuals face. This realization led to the development of the world's first dedicated service knives, created in collaboration with Toshikazu Fukuoka, chief service instructor at FFCC (French Food Culture Center), prize winners, and the Association des Maîtres de Service. The “Tojiro-Pro Service en Salle” series is recognized as recommended knives by the Association des Maîtres de Service. Their refined sharpness and exceptional usability have also garnered high praise. Notably, Osamu Takamori, champion of the 9th contest in Japan, regularly uses the “TOJIRO-PRO Service en Salle” series and also achieved victory in the world contest, showcasing both his skills and the knives' performance.

These requirements were quite demanding, and I even wondered if they could be met. However, to my surprise, Fujitora precisely realized everything I had envisioned. I was deeply impressed by their exceptional skills and the quality of their design.
I am also very proud of their work. As an instructor, I often demonstrate cooking techniques to students, and I am delighted to have the opportunity to showcase the excellence of these knives. This series, developed in collaboration with Mr. Toshikazu Fukuoka, the chief instructor of FFCC (French Food Culture Center), is specifically designed for professional Gueridon service personnel. It is also recommended by the Association des Maîtres de Service.
This marks a global first. It enables "fascinating service" and is essential for this type of service.
VG10
VG-10 is a hard, high-carbon stainless steel containing cobalt. This material offers excellent sharpness and abrasion resistance, making it popular among professionals. It is developed and manufactured by Takefu Special Steel Co., Ltd., a Japanese company. If the entire blade is too hard, it becomes difficult to sharpen. If the edge is too soft, it dulls quickly, and the sharpness diminishes rapidly. Therefore, the hard material (VG-10) is used only in the core, while the softer material is used on the sides. Due to VG-10's hardness, especially for professional use, a ceramic sharpening stone is recommended for efficient sharpening.
Note:
While the VG-10 core and outer layers are rust-resistant, it is essential to wash, wipe, and thoroughly dry the knife after each use. Should rust appear, it can be removed using a cleanser or sharpening stone (minor scratches may occur). To prevent damage, avoid twisting the blade or striking hard surfaces. Do not use the knife to cut frozen foods or bones, as the thin Japanese blade, designed for exceptional sharpness, is susceptible to chipping or breakage. Due to the handcrafted nature of Japanese knives, minor scratches may be present.
