This is a Sakai Takayuki "KASUMITOGI" Professional Edo Style Usuba, made of Yasuki White Steel(Shirogami) with Magnolia Wood Handle & Buffalo Horn Bolster.
Usuba(Vegetable Knife)/Single-beveled blade is generally used to not only simply cut the Vegetables, but also involve slicing them into sheets(called "Katsuramuki") or cut them small and intricately for decorative purposes. While there are some differences in shape between the Kanto(Edo/East) and the Kansai(West) region, the purpose for each Usuba are in most part the same.
